My wife made me this banana bread last night and it didn’t last very long at all. It’s one of the best banana breads I’ve had, and I’m not just saying that.

Easy Dairy & Gluten Free Banana Bread

Very Easy to make and delicious.

  • 2 cups gluten free flour
  • 4 bananas organic
  • 1/2 cup swerve
  • 4 tbsp olive oil organic
  • 4 tbsp coconut oil organic
  • 2 tbsp coconut milk organic
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp vanilla beans
  • 1/2 cup blueberries (optional)
  • 2 eggs organic


  • Preheat oven to 350 degrees. Line all edges of an 8x8inch pan with parchment paper, set aside.
  • In large bowl, combine all dry ingredients.
  • In a smaller bowl, whisk oils and swerve. Then add eggs, coconut milk, vanilla, mashed bananas and mix well. 
  • Combine wet mixture into dry mixture in the larger bowl. Fold in blueberries gently to retain their shape. 
  • Pour batter into lined pan and bake for 50 minutes. Check bread is ready by inserting a toothpick or knife in the center of the bread and it comes out clean.
  • Let cool for 2 minutes before slicing. Serve with coconut oil and enjoy warm!
